Baked spaghetti squash in the lower oven (after poking holes in it) and then mixed, on a tray, some hamburger and bacon (mostly the burger) with much garlic, pesto sauce, garlic paste, lime juice, red wine vinegar, parsley (fresh), mushrooms, various colored peppers, salt, and some lime pepper. Baked that in the oven too, slowly, so that the meat had time to really draw in all the flavors.
Split the spaghetti squash and scraped away until there was a steaming mound of yellow "noodles" to ladle the meat mixture over.
It was very good and very healthy too!

Funny....I was actually sitting here thinking about blogging about my dinner today, but when I saw your blog, I decided it best not to "undercut" your blog. My dinner was not so healthy but it was absolutely delicious! I marinated & grilled a London Broil, roasted potatoes & onions & sauteed some mushrooms. YUM, YUM.

undercut a dinner blog .. hmm. .there's a joke in there somewhere!
I, for one, do not see people posting on the same kind of subject around the same time as undercutting .. I call it a happy coincidence, mostly; and especially with something like this. I mean, we all know that most of us have at least one meal every day so if 6 of us blog about it in the same hour, for instance, it should be no great shock to anyone's nervous system.
That does sound like a good dinner, too! You should blog about it so I won't have to ask all the important questions in life like : marinated it with what, for how long, by what method? Go and blog in peace, my child! lol

Fell in love with spaghetti squash two years back. I'd had it growing up and never cared for it, then got some from my organic food co-op. It was the difference between a McDonalds patty and a 1/4 lb. hand-molded patty with a sliver of butter in the middle grilled over hardwood charcoal. I traded everything I could for the squash after that. After the season, I tried one from the supermarket again and... bleh.

I know what you mean, but this one was pretty good! I noticed that some of the regular stores (as opposed to Sam's Club) in Arizona have much tastier vegetation than was getting imported to Alaska. Mind you the stuff in Alaska, grown in Alaska, is awesome and lovely and never to be outdone, but the imports are not that thrilling.
I am hoping to ge to the point where we can have a roof garden. Need it to be on the roof because of the havelinas getting into people's yards and such. Not sure what all we'd need to do to fix the roof up right, though. If we can get that going, I'll be planting all sorts of yummy things. Can never get enough fresh spinach, green onions, chives, tomatoes .. mm ....
