About a year ago I started using honey as my only sweetener. After being bombarded with countless messages about how white sugar is the most evil chemical ever purified, I bought some honey and put some in my coffee. That night I didn’t have to get up to piss. I was sold.
It is the perfect sweetener. It is a whole food. It is very close to life, or being alive. It constitutes one of those foods that can sustain a life form all by itself. Sugar can’t do that. None of those purified “natural” sweeteners can say that (i.e. stevia). And god knows what horrors lurk behind any of the artificial sweeteners, so hastily sent to market.
The entire obesity epidemic can be blamed on the purified forms of sugar. I can. If they didn’t exist, the world would be different. Like anything you care to blame for something, it winds up being connected to everything else.

This article talks about a study with rats. (People are just like rats. Aren’t they? I’m positive that we’ll live longer if we’re starved, too.) Anyway, in this study, the scientists couldn’t make their rats gain weight, no matter how much honey they substituted to replace any sugar in their diet. (These scientists were from New Zealand, so they wouldn’t be influenced by corporate greed and power… as in the United States. But I digress.)
Honey is more expensive and its quality can vary widely, but that is true about any whole food. View sugar as something that is just too cheap.
Read the article and start getting thin and healthy. Believe in it.

How interesting!
I have long kept jars of honey at my office as well as home, always paying extra for the local grown variety. I have encouraged - mostly without success - those around me with allergies to take a spoon of this honey daily for help with reactions.
I will start replacing the omnipresent Splenda immediately. Thanks for the "Honey Do" list!

You can substitute honey for sugar in recipes too - I think it tastes better, has a richer quality and of course is so much better for your health.

I've heard this about honey ...and have been thinking of buying some...
I live where there are a lot of local honey for sale... ...so I have no excuse!

Letter to the editor:
Hi, Jack,
Saw this post on your blog and wanted to let you know (since I can post only once in a blog) that I used honey in my two cups of coffee this morning.
I could not believe that the only difference in taste was it was BETTER! No distinguishable honey taste and certainly no slightly chemical taste as is often offered by Splenda and other more artificial sweeteners.
I am a convert!!

Another letter to the editor:
Banana Bread Muffins with Honey
2 1/2 cups flour
1/2 cup raw honey (or regular but raw tastes better)
3 1/2 tsp baking powder
1/4 tsp baking soda
1 tsp salt
3 tbsp oil (vegetable or coconut)
1/2 cup milk
1 egg
3 very ripe bananas, mashed
Preheat oven to 325. Throw all of the ingredients into a bowl and whisk until mixed. Don’t overmix. Line muffin pan with muffin liners or grease pan. Fill to rim of liner or of muffin pan. Makes about a dozen muffins or if you want smaller muffins can make about a dozen and a half. Bake for about 30-45 minutes. Keep an eye on them. When they are golden and a toothpick or butter knife comes out clean they are done. Transfer muffins to wire rack to cool.
*These would be even better with a cup of chopped nuts or 1/2 cup choc chips!
