Hey I just am making sure it isn't my head that comes off....lol
Now as for on topic....I love to cook just about anything...three things I always am asked to bring to parties is Fruit Dip, Cole Slaw and Spinach, Choke and Cheese dip.
As for taking things out the night before, that would mean I would have to know in advance what I was making. Have taken stuff out, got home and decided that isn't what I really was in the mood to make.
One thing I love to make a big pot of and freeze is Stew. One of those wonderful comfort foods that are just right at times. I don't care if it is in the upper 90's will make a big pot anyway. Hey that is what AC is for

I have to do mine on the stove...it never comes out right when I do it in a crockpot...plus I can't make dumplings then. Old habits are soo hard to break when it comes to food...lol

I love cooking period, but cooking for one can be dangerous for the waistline. I seem to enjoy my cooking so much, I hardly leave any leftovers.

I find that the more involved the recipe is the less I eat of it. Take Thanksgiving, my best friend and I do all the cooking (the only holiday I spend with friends not family) for about 20 people. By the time we are done cooking I barely eat anything. It isn't so much that I am tired, I just am sick of looking at food at that point. We start cooking the day before, so it doesn't all have to been done in one day and we can spend time with everyone that is there.

2 nice I get out my zip lock bags and throw the extra in the freezer ASAP. If I didnt do that my waist line would be even worse then it is already.
The last two Thanksgivings I took the easy way out. I ordered food all prepared from Boston Market.I also ordered Pies from Perkins I wanted to kick back and enjoy my days off. Boston Market makes pretty good Turkey.. I like my stuffing better then theirs though.

I love to cook and thought about going back to school for culinary, but I have to say that cooking for one isn't that much fun. Now if they had a class in culinary for throwing things in the microwave for one I'd come out of there with flying colors..........

I love to cook and thought about going back to school for culinary I looked into a few of them...super expensive, plus you have to buy all the cookware, knives and whatnots. On top of books and all!! Of course you can't buy the cheap wal-mart brand either.

After watching Hells Kitchen this past season... It wiped out any foolish notions I may have had about attempting to improve my culinary skills. That chef was very very scary.

If you don't have passion for cooking for one don't become a chef, you will be just average & that is a hard life. it's all about the passion. Anyone one with great passion, average brain, & alot of determination can become a great chef. My trip was tiring, red eye, but; found a much better syrup company, real natural & not over powdered by sweet, finally got to taste Gelato as made In Italy. More convinced now Gelato when done right is the best Ice creams & desserts on the planet. Great thing is it can be made containing only 3 to 6% fat. Cooking for one! For me an out door convection grill. Meat, veggies, even fruit come out moist & tender, almost impossible to mess up. Slap it on, foil it, relax & let it cook, it's all good & great in hot weather which we have plenty of. I am always looking for great recipes in regard to frozen desserts or desserts with a shelf life of 5 days or more, know any?

There is a school in Italy, must be around 20,000 now, 3 months intensive, cooking, wines, desserts, baking, with the science behind the whys & hows, includes room & board,will come back with enough knowledge to go from there, will blow many local chefs away, will also have a blast with off time. Don't have 20,000 - have much passion, learn on your own, it can be done. Start with the basic science, how ingregients react to one another, & so on. Here is where bthe passion comes in. take any type of job in the kitchen were there is a great chef, don't ask queations just watch for a time, don't just do your job pinch in when possible. Before asking questions educate yourself with books, cds, & trying recipes. Bring to work tried recipes even if not great & ask why. If no advise is offered cause their all pricks move to another great place. Truth, there aren't many old word eateries where diners are made from scratch so to speak, to expensive, most are 2 steps above fast food. The shows you see like hells kitchen are pretty close to reality in a great kitchen except for much on the non sense, but; meals start at 100.00 & up. Eggs, bacon, toast & coffee will cost ya 20 at the Plazza. Vegas has some of the best chefs & food in the world, ny is always great, every major city has great kitchens for the rich. yea I know, bored the hell out of you, but; to repeat, it takes great passion, your bored I am excited talking about it. I am not selfish & no one asked, but; I don't give out recipes for the most part, it's worse than sharing your woman. Now that is not selfish, is it!
