Talking about cooking for one on another thread got me thinking about cooking in general. Seeing Thanksgiving isn't that far off, what are some of your favorite things to eat or cook?

My favorite thing to bake is Pumpkin Roll. I have to make a whole one just for my godson. He has already called me and asked if it is time to make it yet. I also make my own Aberdeen Sausage for my stuffing.

I make some yummy pumpkin bread... Its really easy to make. I have made it with the children in my class in the past.

Dove the pumpkin roll I make is a little bit time consuming, but I made three of them for my godson's birthday. He didn't want cupcakes, just pumpkin roll. This was for a 2nd grade class and there were no leftovers. I would be more then happy to post the recipe if you want to try that....

That is another thought, if you have a recipe you would like to share post it

Pumpkin Roll
1/2 cup all purpose flour
1 tsp baking powder
2 tsp pumpkin pie spice
4 eggs separated
1/2 cup canned pumpkin (if you get the one with the spices in it, you don't need the pie spice)
1/2 tsp vanilla
1/3 cup sugar
1/2 cup sugar
sifted powdered sugar
Combine flour, backing powder and pie spice; set aside
in a small or med mixing bowl, beat egg yolks and vanilla on high for about 5 min or till thick and lemon colored.
Gradually add the 1/3 cup of sugar, beating on high till sugar is nearly dissolved. Stir in the pumpkin.
THOROUGHLY WASH AND DRY THE BEATERS
In large bowl beat egg whites on medium till soft peaks form (tips curl). Gradually add the 1/2 cup sugar, beating toll stiff peaks form (tips stand straight).
Fold yolk mixture into egg whites. Sprinkle flour mixture over egg mixture; fold in gently till combined.
Spread batter mixture evenly onto a 15x10x1 jelly roll pan lined with greased and floured foil. (parchment paper works wonders) Bake in a 375 degree oven for 12
to 15 minutes or until cake springs back when lightly touched near center.
Immediately turn cake onto a very thin towel or paper towels sprinkled generously with powdered sugar. Peel paper off and roll up the cake and towel from one of
the short sides. Cool on a rack. Once the cake is cool ( can put in the fridge or freezer if making it ahead of time). Unroll cake; remove towel. Spread with cream
cheese icing. Roll cake up and put in fridge till ready to serve. Sprinkle with powdered sugar before serving. Cake freezes really well after it has been filled also.
Cream Cheese Icing
8 oz cream cheese
1/2 butter
2 tsp vanilla
4 cups (1lb) sifted powdered sugar
Beat everything but the powdered sugar until light and fluffy. Gradually add 2 cups of powdered sugar beating well.
Gradually beat in remaining sugar to make frosting a spreading consistency.

I don't really like pumpkin that much, but love this cake. It is not too heavy like some can be. I have cheated and made it into cupcakes and used a decorating bag to fill the cupcakes with icing, also spreading some on the top to hide the hole.

I have made this pumpkin roll and you are right, it is time consuming, but well worth it as it is scrumdillyicious....my favorite is Cranberry Walnut pie from Zingermann's in Ann Arbor, Michigan and you can order it from them and they will deliver to Florida...ummmmmmmmmmm

I feel so humbled by all of that can conjure up a great Thanksgiving feast... Do not laugh but I have never cooked a Turkey all by myself

Dove, for all my cooking that you've seenknown me to do...i only made my first turkey back in 2003 and have only done 1 since....

they are intimidating at first but really quite easy if you follow the directions...

Follow directions EA moi I had some of your turkey you made in 2003 it was pretty good ... I on the other hand would need a personal turkey trainer.

Oh man pumpkin rolls are the bomb!!! I haven't had one in like 15 yrs, my sister used to make them for Thanksgiving, they are great, Witchie you can make on for me, I am not really into cooking myself, I mean I can do it, just don't like it... But I think that everyone needs yams of Thanksgiving, just isn't Thanksgiving without it!!!!

I do not mind the cooking but I manage to use every pot in my house and make a lovely mess, the cleaning up part is not fun. Although I like the convenience of ordering my dinner from elsewhere , it is not the same as having those wonderful aroma.s drifting through the house .
