i went shopping for lunch in publix the other day and ...among other things...(heh heh heh) got a cool salad which gave me an idea...

so today i had a great, but simple-quick salad

ingredients:
- fresh spinach (buy a cheap no-name brand for $2)
- some unsalted nuts
- some walnuts
- one apple
- peanut sauce (pickup a bottle in the int'l section of your grocery store)
- small tomato

mix a small handful of nuts and walnuts in a small amount of peanut sauce - enough to taste. mix in a generous serving of the fresh spinach. throw in a few slices of an apple. throw in a sliced tomato. add your favorite dressing - something light, not heavy or creamy (i used mushroom vinagrette - yum). and hot dang - a delicious salad for one.

here's another quickie but that's really good - pesto sauce (sort of). i saw this on one of those food shows - couldn't believe how simple it was to make

ingredients:
fresh spinach
unsalted nuts
some tomatoes
some onions
olive oil
some cloves of garlic

basically - take everything and blend it together in your food processor. all everything - except the olive oil - add that last. add the olive oil judiciously as if you put to much, it waters it down. basically it's just a matter of experimenting with the ingredients to get the right mix for your tastes. when your done though, it's makes a great condiment that lasts for a long time.

i use it on my boca vegan-chick patties. basically a bun, one side with mustard, then the chick patty, and the other side with soy-mayo and the spinach sauce from above - it's SO good....can also add some alfalfa sprouts to the sandwhich to give an added delightful texture - yum!!!!

Actually, Sir.. it sounds delicious! I have been looking for different ideas for quick and nutritious meals and snacks.
I am a Type 2 diabetic(which is under control for now) and recently found out my cholesterol is higher then it should be... so I decided to change my eating habits even more and find some meals and snacks low in sugar and carbs and cholesterol without tasting bland and dull.

Anymore good receipe ideas you care to pass along?

My favorite lunch - salad greens (your choice, I like Romaine), chopped walnuts and craisins (dried cranberries), with Bleu cheese dressing (again, your choice).

or a breakfast: toasted whole wheat English muffin, sliced tomato, low fat Cheddar cheese and a quarter of an avocado..

If you're in the mood for Chinese and can't get take out, there's a brand of frozen General Tso's Chicken (InnovAsian) that is very good, prepared right. Thaw the chicken first, then lightly pan-fry it in a hot skillet with a bit of olive oil. Add fresh sugar snap peas, broccoli, whatever fresh veggies you have, then add the sauce and stir-fry for a minute or two. It's very sweet, so I dilute the sauce with some good soy sauce.

It's quick (only about six minutes total!) and better than most frozen stuff; one package will feed me twice (with the additions) but bigger appetites could probably handle the whole thing.

I love Asian, and I love easy, so this is a favorite of mine.

Oh, and Snappy - I'm also diabetic, diagnosed 16 years ago...went from taking meds 4 times a day to diet controlled. For me it wasn't so much what I ate (but the diabetic diet is a good general one anyway), as much as exercise. The diet helped, but it was when I really got into exercising that the blood sugar dropped. Alternating weight lifting with aerobics works best for me, especially if dancing is providing the aerobics...a couple of hours of dancing will definitely do it. And eventually, artificial sweeteners taste just fine

I like those El Charrito frozen mexican dinners......I cook two of them, but I only eat the enchiladas and tamales......Im not big on frozen beans and rice.

Vienna sausages are really good too......I like the ones in the hot sauce.......I dont drink the grease juice out of the can, but my friend Jeff does........he said his granny lived to be 90 yrs old and she always drank the juice......I told him that I was pretty sure it wasnt due to her consumption of Vienna sausage juice though.
