Atmosphere! If you intend for it to be a sit down place? All about character and personality! What type of shop are you planning on? Hang-out? grab your coffee and fly?

I agree with Wanda on this one. Atmosphere is first and foremost. Cozy chairs, little nooks, supplied paperbacks.
But you can't forget the quality of coffee as well. I hate Starbucks coffee, always tastes burnt. We have a coffee chain here in WA called Tony's coffee and they are the best by far (IMO).
Iced mocha in the summer is great!

Couple of thoughts:
Have good customers bring in there own coffee cup, have them on a shelve for display. It can set a welcome atmosphere. You set the standard you want cups to be. Don’t want people to bring in gallon size cups. I have seen this done in German bars, patrons has there own beer mugs. I had one at more than a couple of places. I felt special that they asked me to provide one.
Free wireless internet.
A staff that can honestly smile!!
I went to a place here in Killeen and they had book shelves full of books and couches and chairs with in tables and tables to place the coffee on and to read, or chat with people. They had tables for the more traditional coffee shops, but what a nice atmosphere to set and chat with someone for the first time.
GOOD COFFEE ALSO!

Vanilla-Hazelnut latte'
UUUUUUGGGGGGGGHHHHHHHHHHH
Have good, regular, rich coffee and whatever you do, do NOT serve it in cardboard (paper) cups (ala Starbucks)- it really does ruin the flavor.

So many options Techie, do you have a location in mind, target market? I may be able to help you out if you like. Feel free to e-mail me. I had 4 of them in Hamilton, ON and learned a great deal from each one. Different locations, clientele etc... Like I said feel free to e-mail me!

Mocha latte*
mocha cappucino*
comfortable chairs and calming decor
*in big ceramic mugs. Sell the heck out of coffee "cups" that can be reused for a discount.
Biscotti- chocolate iced, or lemon

Dwain all our "regulars" had their own. It's a great idea really, makes customers feel welcome and a part of the "family", oddly enough tho, lots preferred the paper cups!

I would suggest you have something else to drink for those of us who do not like coffee, but might want to stop in with a friend who does like it.
I like the mug idea, and atmosphere is paramount. I know people who drink the "specialty" coffees (mocha latte whatever, etc. ;-), so those would be good too.

I might also have people make their mugs for when they come in you know like their names or have their kids color that way they could have their drink in their mug.
Since my name is Jo it would be called "Cup O' Jo" Java Cafe.

Techie I think a key thing to keep in mind is you can't be everything to everyone. You'll need to decide if you want to promote a cafe type atmosphere or a family restaurant. You'll want to have a location in my mind as well and consider if it's pedestrian or driving traffic. Will you be in an area that draws shoppers or do you need to draw them yourself? You need a solid plan and should check the demographics of the area you are in. Who is spending money and on what, are there mostly singles or families in the area etc... this is easily accessible on the web, prob your local gov website. Who are your competition? what makes them successful?
Anyway good luck in your planning and have fun. It's all very exciting!

funny you asked this question.......was discussing with a friend about a book store I went into called Awakenings (spiritual and healing) and the moment you walked in, you heard a water fountain, really soothing music and innsence........I think a coffee shop with that type of atmoshere would do great and maybe with a few books to read (guess like a starbucks)

Being from The Seattle region, it's time that I give you a tip:
Learn to "talk the talk before you walk the walk".
If I come to your Coffee shop and order
a Triple Shot Grande-Breve at 135 degrees with Almond flavoring and topped with Cinnamon and Vanilla powder and a blueberry scone, also some chocolate covered Buzz Beans for later.
Will you know what I'm talking about? There is a lot to learn when it comes to coffee and pastries.
Hmmmm...how much should I tip today? $$$$$
P.S. A working Free wireless internet and some upbeat decor (pictures and a fire place lounge with leather furniture and morning newspapers would be top notch.
