Does anyone have a good recipe for a nice meaty chilli? I have had several recipes but it seems that most of them are hot but have no taste. So I have resorted to buying chilli at jason's deli w/chopped onions/cheese/ and chopped jalepenos. Are any of you chilli lovers and does anyone have a decent recipe for chilli.

my chili is simple and you can spice it up anyway you like but i leave it thick and rich......
2 packages of chili season mix 3 cans of bush chili beans 1 can of light kidney beans (drained) 1 large can diced tomatoes 1 can of tomato juice 1 cup of water (more or less to use to thin) 1.5 lbs of ground beef dash of extra chili powder chopped onions or dried chopped onions (to taste) garlic or garlic powder (to taste) salt and pepper (to taste) Optional: chopped green peppers (to taste)
Sauté the onions, peppers and garlic if fresh then add ground beef and brown till done oh high (stirring continuously). In a large pot combine the rest of the ingredients (except the water) and add cooked hamburger mixture and bring to a boil then slow cook for about an 1 hour. You can add water to thin it but i leave mine thick and sprinkle with cheese.
Add sauce if you like it....

Hi Silver...
Are you looking for taste and hot or taste and mild? I don't really have a recipe. I tend to grill my meat, either ground round or chopped steak, and then just start adding things to taste. I could try and put one together based on your tastes. I love chili and am always looking for new ways of preparing them, but have found that adding to the base various items a small bit at a time is the best way for me to prepare it.

I like a variety of beans. Dark kidney, pinto, and black beans at a minimum.
1 can dark red kidney beans 1 can hot chili beans (seasoned pinto beans) 1 can black beans 1 can diced "zesty" tomatoes (already has jalepeno's in it!) 1 large can tomato sauce (unseasoned) 1 small green pepper 1 small onion 1- 1.5 lbs of ground beef 2 packages of chili seasoning (I like one "hot" and one "original")
Chop up pepper and onion. Cook up the pepper, onions, and beef. Dump all ingredients into a crock pot and cook ALL DAY.

I had an old friend who had one of those 3 alarm chili recipes loaded wtih the good stuff your looking for.I wish I'd have gotten that recipe from him before he was planted. Best damn chili Ive ever had.

I throw in a large can of tomato paste too. That adds lots more flavor and thickens it up a lot...

PS: i forgot to add that i always rinse and drain the kidney beans......also drain the hamburger mixer and blot it with a paper towel to eliminate the grease

i forgot to add that i always rinse and drain the kidney beans...... I've always wondered why most recipes recommend that....is it because "kidneys" give off nasty by-products??????

Pal, "Lovin' Man" and I want to try a pot!! ;)
1 lb sausage 1 lb deer burger 1 large onion 1 medium bell pepper (diced) 2 T. chili powder salt & pepper to taste 3 (14 oz) cans tomatoes 2 (15oz ) cans chili beans.. hot or mild - your preference
Brown sausage, deer burger onion and pepper in a large skilled. Drain excess grease. Transfer mixture to large kettle and add chili powder, salt an dpepper. Stir in tomatoes and beans. Bring to a boil; reduce heat to simmer for 20-25 minutes. Makes 8 servings.
I am sure you can use regular hamburger, we just happen to like it with deer.

Does anyone use a beef roast instead of ground burger?
Take the roast and roll it in flour, ( the whole roast) and fry it. Then put it in the oven for a couple of hours.
Cool it and shred or tear it apart. Save the broth for the chili too.
I also see that no one is putting sugar in their chili. Sugar, helps with the acid part of the tomatoe sauce. Also, a bay leaf put in it helps too.
If you are putting onions in the burger from the start of frying, the onions aborb the grease, so when you start putting it all together, you will see grease coming to the top of your chili.
I like a couple different kinds of beans too. If you are starting from dried beans, you can put a little baking soda in the first boil, drain and rinse, put new water in it wa la,,,,no gas.

Brown sugar here.
I feel like kind of a wuss admitting this, but I always add a couple of small handfuls of brown sugar into the crock pot whenever I make chili.
All of the weights up here are in metric, and even though that's the system they've been using up here since I was a little kid, I have to convert everything first. Temperature, weight, height, distance, whatever else there is.
Anyway, please forgive me for not knowing the exact measurements of any of this stuff. /////////////////////////////////////////////////////////////////////////// Oh, well heck. I guess it'd be kinda dumb for me to try and do a recipe then wouldn't it.
So I'll just go with Katt on her suggestion of adding sugar--brown sugar.
And it's real good too. With the monthly budget I'm given to live-on, I've kinda gotten used to the economic sense it makes to cook-up a whole crock pot of this stuff. And then since I live alone, I eat the stuff every night for the next week and a half. With a microwave oven, dinner preparation is a snap.
Since I'm the only one eating the stuff, feelings of contentment fill the chef. (I do eat chili con carne fairly often. *giggle)

Servant, any kind of sugar is usally one of those "secret" things people put it.
Crockpot is a wonderful way to cook Chili. Don't forget, you can freeze it too. It is nice to get some out of the freezer when you don't want to cook.
I will try the brown sugar next time too. That puts me in the mind of what my brother made called, " Chuck Wagon Beans'. His also had bacon in it.
