Just make sure it's ripe..some kinds need to be really SOFT or they're disgusting!
Basically you, uh...just eat it.
(If you liked it, try serving it alternated with wedges of avocado...peel both first ...kind of pretty )

Or spj, just do what I do. Put it on the kitchen windowsill to ripen, then forget totally about it, and when you remember, throw the moldy thing away....

Is it an Asian persimmon? Or is it a North American persimmon? Asian persimmons are not neary as bitter if they are not fully ripe and you can eat them although they taste much better when ripe.
Personally I don't like the cultivated gian Asian persimmon. I like the North American variety which grows wild all over the country. The fruit is much smaller but they are much sweeter and have a certain character that is hard to describe. If they are not fully ripe then they are extremely bitter and if you try to eat one you will not get the tast out of your mouth for an hour or so. They are hard to know when they are truly ripe unless you happen to have some experience with them. If they are on the tree they will be ripe when they fall but a day or so after that they are too far gone to eat. Also they will change color and become almost translucent, the North American variety that is. Basically there is a one day window of opportunity when they are really good to eat.

I've got a persimmon tree out by the barn at my place in NC. My neighbor told me a story about how a black bear came onto the property and climbed to the top of it and would smack down the persimmons to her 2 cubs that were waiting at the bottom of the tree. I never saw a bear do that again during the 25 yrs. that I've owned the place....I bet that was really cute.

Well SJ that is an Asian variety. Hope you liked it. Maybe you can get a chance to sample a north American variety one day. Just make sure it is really ripe first.

persimmon pudding.. my aunt just sent me some and it is fantastic !.. kinda tastes like pumpkin pie, depending on the spices you use.. I don't like cloves or nutmeg, so she leaves that out... try it !

The best I can describe it is between mango and pumpkin. Was ok. Has an aftertaste a touch like like chalk is in your mouth though.
