just finished making my third cheesecake today.. plain..
sure wish someone would place an order for something a little different.. I have the fixings for a pineapple one.. and a caramel toffee one.. and I always have cherry toppings

I've used a recipe for cheesecake that does in a pinch when you don't have the time to make a real one. 1pkg cream cheese, room temp or slightly melted 1 small container whipped cream 1/2 cup sour cream 1 tsp vanilla 1-2 drops of yellow food coloring (opt for coloring)
mix all together until well blended, pour into graham cracker crust, refrigerate.
It's not nearly as good as real cheesecake, but served with fruit, it's still pretty dang good and I haven't had any complaints.

I make cheescakes to sell.. it puts a little bit of extra cash in my pocket .. so I am always on the lookout for a new recipe. And I bake other goodies too... cobblers, stuffed mushrooms.. especially around the holidays when folks just don't have the time to do all the baking they would like to do.. and like I said, it helps out financially.

very simple Hylander.. when I get a few extra minutes, I'll email you some recipes. Takes about 10 minutes to throw on together, 35 minutes to bake...

Here's a good sugar-free cheesecake.
Maple-Nut Cheesecake
This is the lightest, fluffiest, creamiest cheesecake I have ever eaten.
Crust
2 cups pecan meal or finely chopped pecans 1 stick butter, melted 1 tbls Splenda dash salt
Mix together and pat down into a springform pan. Set aside.
Topping
1/2 cup SF pancake syrup 1/2 cup coarsely chopped pecans
Combine. Set aside.
Filling
3 8 oz pkgs cream cheese 3/4 cup heavy cream 1/4 cup SF vanilla syrup 1/2 cup SF pancake syrup 1/4 cup Brown SugarTwin 1/2 cup Splenda 6 eggs
Preheat oven to 350 degrees. In a food processor place cheese, cream, syrups, and sweeteners. Blend well on "low". Add eggs, one at a time, turn speed to "high" and blend for about 2 minutes. Pour filling over crust and bake for 30 minutes. Carefully slide oven rack out, spoon topping over cake and bake for 15 minutes more.

Digestive (wholemeal/sweetmeal) biscuits make the best cheesecake base bind with real butter and press into the base of your dish.
I am not sure what you would call those biscuits over there, that's if you can get them.

mmmmmmmmmmmmmm.....one of my favorite things to make.....cheesecake. Being one that is not a fan of plain cheesecake with fruit on top I seek out and make flavoured ones....Kahlua Chocolate.....Mandarin Chocolate....Amaretto....and the list goes on.....recipes for sharing if anyone is interested.....just drop me an e-mail.

3 8oz pks of cream cheese 1/2 can of sweetened condensed milk 1 small carton of sour cream 1/2 cup sugar 3 eggs 2 tsps vanilla 4 tblsp of flour
beat the cream cheese till smooth add eggs one at a time, mixing well after each add sugar and mix well add vanilla, sour cream and sweetened condensed milk, mix well. add flour and mix well ( no lumps)
use the standard crust recipe
bake at 350 on the top rack of the oven about 40 minutes when you see the mixture get to a dull matt sheen, cover the top lightly with a piece of aluminum foil and turn the oven off. ( the edges might start to brown a bit, that's ok) leave in the cooling oven about 20 minutes remove and run a knife around the edge of the spring form pan and let cool for 1 hour remove and refridgerate for a few hours
I use parchment paper under the crust.. that makes it easy to remove to a plate.. when you put the bottom of the pan in the ring, let the parchment hang over the edge by a few inches to make for easy transfer.
this is my basic recipe.. sometimes I use a can of crushed pineapple ( drained very well) and fold it into the mixture.. this a favorite one of mine.. very refreshing. I also use blueberries ( drained well) in the mixture ( NOT blueberry pie filling)
