I just tried this at home and the eggs are AWESOME!
Put 1/3 cup of your favorite salsa in a non stick frying pan. Heat until salsa starts to bubble, you may want to turn down the flame just abit. Cook your eggs until done!
This is so simple and tasty...and a great way to avoid any extra fat!

I was making my own salsa last week, I took 7 kinds of peppers and both green and red onions and chopped them up and mixed them together, added some roasted garlic.
Since I had some left over, I half cooked some taters, sliced them up added the mixture of peppers and onions also put some mushrooms and a few spices......wrapped it all up in foil and put it on the grill as I cooked up some meat..
I made it spicy because that is how I like it, but there is no need for butter or sour cream, so if you are looking for a low fat delicious add-on to a meal ?
I re-heated some and had it for breakfast too........

Mixed with potatoes.........and I also made of some scrambled eggs to go with it...
A little bacon, and some toast, it was a full meal.

Try this put a little olive oil in a pan 3 turns add a flour tortilla then cover with any salsa of your choosing [I prefer a Chipotle for it's smoky flavor.] Then add several scoops of black beans [with some of them whipped in a blender] then move the beans to form two hollows to which you add a egg in each hollow then simmer until the egg is as you like it. If you have a small can of Mexican flavored hot sauce add 1 or 2 table spoons to enhance the flavor for that latin flavor. For those that must have cheese try the shredded Mexican cheese a blend of 4 cheeses with a low melting point added 1/2 way through the cooking process...
This is very filling, low in fat and tasty....
