So.. what do you do with leftovers?
I had a turkey sandwhich on wheat bread with mayonaise and ketsup
Tomorrow it will be open faced turkey sandwhiches with gravy

Leftovers is the best part of the Thanksgiving dinner! In my family, we usually reheat everything as is and when we run out of stuffing, mashed potatoes, etc, then we will make something a little different with the turkey.
If there is tons of turkey left, I'll freeze it for meals later on.

My mom's recipe for leftover turkey.
In a little oil, fry some potatoes diced with a a diced onion and some chopped celery. When they are done, add a can of whole kernel corn, then add some of your turkey gravy, or add a little flour and some water.
She called it turkey hash, it is pretty good. You can leave out the gravy if you prefer.

We had lobsters for Thanksgiving dinner -- leftovers is only a theory!!!
However, had I had some leftover lobster, it would have been in Friday morning's omelet with some cheese and topped with guacamole...

Hell even a hangover goes well with leftover lobster!
The collards are approaching the bottom of the pot, some have been relegated to freezer bags to serve between now and Christmas, but I'm telling you the best part of the leftovers, and this is TOTALLY unexpected, was the pork tails I used to season the collards!
OMG they are SO tender and flavorful, to describe them, they are similar to say a turkey neck, with about the same amount of meat, but with a thick fatty covering which you peel away to get at the meat.
You can turn your nose up if you want to, but this is the BEST meat on the entire hog if you ask me!

I can't turn up my nose if I haven't tried them, so I bet they are good. Like brisket, lots of fat makes the meat tender, moist, and taste good. I love a good smoked brisket, beef.
