Tried a new way to cook venison, it turned out REALLY good!
A buddy of mine cooked a backstrap cut into several pieces on the stovetop in a cast iron skillet, then added sliced bell peppers and onions and chipotle gravy and baked it in the skillet for half hour, it was very tasty!
I adapted this recipe from that:
1-2lbs venison (preferrably backstrap) cut into 3/4" to 1" thick medallions half of a large sweet yellow onion one each red and orange or yellow bell peppers one large green onion or 2-3 smaller ones sliced carrots or baby carrots sliced mushrooms of your choice 1pkg Amazing Taste seasoning for beef 2pkgs McCormick Chipotle gravy mix for steak
Season venison with amazing taste seasoning mix, in a cast iron skillet gently brown venison in extra virgin olive oil turning and seasoning as necessary, should take about 15-20mins on medium heat. Remove meat from skillet and arrange in a single layer centered in a 13"x9" baking dish. While hot, deglaze skillet with a bit of water and add this to the baking dish.
Coarsely slice peppers, onions, and carrots, arrange carrots to the outside of the baking dish and cover meat with the remainder of the veggies.
Make the chipotle gravy using two packs of mix and two cups of water, pour this over the contents of the baking dish and cover with tin foil.
Bake at 350 degrees for about an hour and 15 mins or until bubbly, remove foil and bake an additional 15mins.
Serve this over rice or mashed potatoes, makes enough to feed 4, especially good when served over rolls or fresh baked bread too!
A note on packaged seasoning mixes... I sometimes use these if they sound interesting and there is no outlandishly hard to spell ingredients like glutamates and monosodiums and polysorbates and who knows what else is in there, I found the Amazing Taste brand of mixes to be convenient, and actually they taste really good!
The McCormick chipotle gravy mix for steak is KILLER!
These are sold in Food Lion stores and after using the mix for hamburger and for beef, I think I will use them more often. I am not a professional chef or gourmet by any means and although I do enjoy cooking with fresh ingredients and making gourmet dishes, much of my cooking is centered around dishes that are practical and tasty, can we say easy to make here? And yes I will cut corners where I can, and on a cold windy December night, using this packaged mix to make this super tasty venison dish was a good move!

sounds wonderful,,,especially since a friend has some venison for me 
Another sauce that is nice with venison is McCormack's Green Peppercorn sauce mix

I recently tried moose. It was very much like beef, but leaner and not gamey at all.
