On the lookout for recipes of good tasting, healthy alternatives.....and after the elusive "best" muffin recipe right now.
I found an awesome one in a really strange place (in the text of a fiction book) and have was reminded how much I like a good, healthy breakfast muffin.
So, any ideas to share?

any muffin recipe can be made healthier if you substitute the oil with applesauce. They stay very moist .

OK...maybe not healthy by the standards of some (maybe most), but they are darned good!
Raisin Bran Muffins
1c Oil 3c Sugar 4 Eggs 1 Qt Buttermilk 5c Flour 5 tsp Soda 4-1/2 tsp Salt 5 tsp Cinnamon 15oz Box Raisin Bran (add last)
Mix oil, sugar, eggs & buttermilk. Add dry ingredients, mix well and then add Raisin Bran.
Bake at 400F 15-20 minutes.
This one will test your arteries

Marvelous (Healthy) Muffins
1 ½ cups flour ¾ cup ground flax seed ¾ cup oat bran (or a mix of 7 grain hot cereal) 1 ½ cups brown sugar (or honey, maple syrup, or blue agave syrup) 2 teaspoons baking soda 1 teaspoon baking powder 1 teaspoon salt 2 teaspoons ground cinnamon 2 teaspoons pumpkin pie spice ¾ cup milk (or yogurt) 2 eggs, beaten 1 teaspoon vanilla extract ½ cup vegetable oil (olive oil or grapeseed) 2 cups peeled & shredded carrots 3 - 4 apples (1 or 2 Granny Smiths & the other your choice) peeled & grated (with large grater hole) 1+/- Tablespoon fresh grated gingerroot (to taste) ½ cup raisins, cranberries, or currents (or a combination) Optional 1 cup pecans (caramelized or praline pecans are the best!)
Preheat oven to 350º F. Mix flour, flax seed, bran, brown sugar (if liquid used, put that in with the other wet ingredients), baking soda, baking powder, salt, cinnamon, and pumpkin pie spice (combo of cinnamon, ginger, nutmeg, & clove). In a separate bowl, combine the milk, eggs, vanilla and oil. Add to dry ingredients. Fold in the carrots, apples, ginger root, and raisins. Line the muffin tins with double paper cups, fill 2/3’s full with batter. Top with a cluster of praline pecans.
Bake for 15 – 20 minutes (until toothpick comes out dry in the middle….you know how!)

Blueberry Orange Spelt Muffins Makes 1 dozen muffins The classic blueberry muffin gets an update with spelt flour and a flavor boost from orange juice and dried zest. I used sweet Texas oranges so they were milder than the tangy sour ones are.
Ingredients 4 tablespoons (1/2 stick) softened butter or canola oil 1/3 cup honey 1/3 cup pureed sweet apple (or half an apple) 2 eggs 1/2 cup orange juice 2 teaspoons vanilla extract 2 cups whole spelt flour 2 teaspoons baking powder 1 teaspoon dried orange peel, ground 1/4 teaspoon sea salt 2 cups fresh blueberries
Method
Preheat oven to 375°F. Butter a 12-cup muffin pan or line with paper muffin liners. In a medium bowl, cream together butter or oil and honey. In a blender, combine orange juice (and pulp minus the seeds) of about 1 1/2 oranges with around half a peeled and cored apple. Measure the mix out to about 2/3 cup liquid. Beat eggs then stir into the orange juice/apple mix, vanilla and the honey/butter mix. In another bowl, whisk together flour, baking powder, orange peel and salt. Stir flour mixture into butter-egg mixture until just combined. Gently stir in blueberries. Spoon batter into muffin cups and bake until a toothpick inserted in the center of a muffin comes out clean, about 30-35 minutes.
Delish! They come out very moist. I had a little extra apple/oj mix and threw it in anyway. They melted in our mouths. Watch out tho, they will fall apart they are so tender and moist!
