I'll bring garlic saffron rice.
Two cups water One cup rice 1/4 teaspoon sea salt One teaspoon crushed fresh garlic 1/4 teaspoon real saffron One tablespoon olive oil
Bring water to boil, add salt, oil, saffron, garlic, rice. Bring back to rolling boil. Boil for 30 seconds, reduce to high simmer, put a lid on the pot and don't mess with it for 20 minutes. 20 minutes later remove lid, check to see that all liquid has been absorbed. Remove from heat for about 3 or 4 minutes. Fluff with fork, serve.

I'm bringing my famous deviled eggs.
Hard boil 2 dozen eggs, peel, cut in half lengthwise, take out yolks.
Mash yolks and add: Mayo (please use REAL mayo...not Miracle Whip) abit of mustard vinegar to taste sugar to taste
Mix together, fill and eat. At every picnic I take them to...they are the first thing that is GONE!!
No I don't add pickle...if I wanna pickle, I'll EAT just a pickle. I'm the same with potato salad.

OK, speaking of potato salad.....
I steam my little bitty red potatoes until they're just fork tender, with a few eggs thrown in...scrubbed thoroughly first, then cut up into quarters (the potatoes, that is, of course).
I toss the innards of the eggs into a Magic Bullet, combined with about two cups of mayo, 3 or 4 stalks of celery chopped fine, a couple of tablespoons of mustard, salt and pepper to taste. Combine with the potatoes and chill. I generally give it a toss with some paprika when I'm ready to serve it (with olives, pickles or anything else that tickles your fancy...I'm with Whatagal - keep it simple stupid and let anyone add stuff other than the basics if they want them).

I'll bring Homemade Yeast Rolls
1 pkg dry yeast 2 cups of warm water 1/3 cup of sugar 1 2/3 sticks of margarine 1 egg (beaten) 4 cups self-rising flour
Dissolve yeast in warm water, add sugar & egg. Melt margarine and cool. Add melted margarine to yeast mixture. Add flour, about 1 cup at a time, beating well after each addition. Put dough in a large tupperware bowl with a tight fitting lid. When ready to bake, fill buttered muffin pan cups 2/3rds full. Bake at 400 degrees for 20 minutes. Dough keeps up to a week in the refrigerator. Recipe makes 36 rolls.
I'll also bring Apple Dumplings
1 1/2 cups of sugar 1 Tablespoon of cinnamon 2 sticks of margarine 3 apples cut into 8 slices 2 cans of crescent roll dough 1 12 ounce can of Mt. Dew
Preheat oven to 350
Mix sugar, cinnamon, & margarine together. Roll crescent roll dough around the apples. Place in a 13 x9 baking pan. Dot with sugar mixture, put the extra apples between the rolls in the pan. Dot with sugar mixture as well. Pour Mt. Dew over top of all the Dumplings. Bake for about 20 minutes or until the dumplings are brown on top...

Since deviled eggs sort of make me think outdoor barbecue potluck, I'll bring...
Steaks On The Grill So simple, yet sooo delicious! I usually cover the top and back of steaks with the seasonings and rub over the steaks. I'm pretty generous with the A-1 and the Worcestershire. Amount of salt is to your preference. Do not leave out the parsley flakes. I try to marinate from early morning until grill time for the best flavor.
Ingredients 5 New York strip steaks or rib eye steak, medium thickness A-1 Steak Sauce (to taste) Worcestershire sauce (to taste) seasoning salt (I use Season-All) dried parsley flakes
Directions In a glass baking dish, lightly sprinkle each steak with seasoned salt on both sides and rub into meat. Generously sprinkle with A-1 sauce and rub in on both sides of meat. Sprinkle with Worcestershire sauce on both sides and rub in. Sprinkle both sides with Parsley flakes and cover leaving steaks to marinate in refrigerator for at least an hour. Fire up the grill and when hot, put steak on the grill, add any extra marinade to the steaks from the dish, as they are grilling. For medium doneness, I grill for about 5 to 7 minutes on each side.

My own invention.
Vegetable Stew
1 large potato, peeled and cut into small chunks 1/2 medium yellow onion, chopped 1 can ranch Style Beans 1 can whole kernel corn 1 can diced tomatoes 2 small cans tomato sauce 1 teaspoon garlic salt 1 teaspoon dried basil 1 teaspoon black pepper 1 teaspoon sugar 1 cup uncooked rice, not instant (I like brown rice) 1 cup water (add more if needed)
Place potatoes and onions in a large pan or Dutch oven. Cover with water and boil until potatoes are slightly soft. Add remaining ingredients . Do not drain canned veggies. Cook over medium heat until rice is tender and the mixture is thick. (30 minutes or more...don't forget to stir.)
This is great with cornbread or any hot bread.

I'll bring my grandkids favorite cake. In fact, on Father's Day we are all leaving for a quick 4 day camping trip in SC and I've been asked to make this and bring it along.
EARTHQUAKE CAKE
1 cup coconut 1 cup pecans, chopped (optional) 1 cup (or more) chocolate chips 1 pkg. German Chocolate Cake Mix 1 lb. confectioner's sugar (box) 8 oz. cream cheese 1/2 cup butter
Heat oven to 350 F. Grease and flour 13 x 9 inch pan. Spread the coconut, pecans and chocolate chips over bottom of pan. Mix cake mix according to package directions. Spread over coconut, nuts and chips. Mix butter, cream cheese and powdered sugar together. Drop teaspoons of this mixture over cake, using it all. Bake for 45 minutes. Cake will set up when cooled. The top will form cracks while baking, resembling an earthquake, hence the name.

OK, picnic or supper -
Roasted Veggies Provencal
1 big roasting pan Olive Oil Herbs de Provence or whatever you'd prefer - Italian seasoning, etc.
Assorted veggies - whatever you like or what looks good at the market - I usually use the following:
Eggplant, 1 large or a couple small 2 zucchini 2 yellow squash 1 red onion 1 bunch asparagus Assorted mushrooms Fingerling potatoes 1 Garlic bulb S&P to taste
Slice everything except the garlic. Coat roasting pan with olive oil, put down layer of veggies (I start with eggplant on bottom). Sprnkle with herbs salt and pepper, repeat for as many layers as you need - I usually finish with the sliced onions and asparagus. Cut off the top of the garlic bulb and put it in there too.
400 degrees for half an hour. Squeeze the garlic out and mix with the veggies.

I'll bring my salmon rolls
Take some cream cheese, softenend and crumble up lots of smoked salmon in a large bowl, add some chopped cilantro and a can of drained, minced chili peppers. Mix well. Slightly warm a large flour tortilla, spread evenly with cream cheese mixture, roll and cut into 2" pieces.
Enjoy!
You can mix this up how ever you want, add chopped green onions if there's no kissin going on... use jalapenos for some fire!
