Here are 2 easy cakes that are served cold and have been family favorites especially in the summertime for years. Serve both cakes chilled and keep them in the fridge when not serving. Enjoy the easy cold cakes in the summer heat.

Mandarin Orange Cake
1 box of Duncan Hines Moist Butter Recipe cake mix
1/4 cup of oil
4 eggs
1 - 11oz can of mandarin oranges (with juice)

Mix all ingredients. Bake in 3 pans at 325 for 25-30 minutes. Be sure to completely cool cake before icing.

Icing:
1 - 9 oz of Cool Whip
1 package of vanilla instant pudding
1 - 20 oz can of crushed pineapple (drained)

Mix all ingredients together. Spread on cooled cake and keep refrigerated.


Caramel Cake
1 box of Duncan Hines Moist Butter Recipe cake mix
2/3 cup of water
3 eggs
1/2 cup or 1 stick of butter
(same directions as box) Mix and bake in 2 pans at 350 for 23-28 minutes. Cool cake completely before icing.

Icing:
1 - 12.25 oz jar of Smucker’s Topping Caramel flavored ( the kind you put on ice cream. Yes it's cheating but all so easy and quick)
1 cup of chop pecans

Place caramel topping in the fridge before you start the cake mix so it will be cold since it will be thin and run when you go to ice the cake. spoon over the bottom layer and sides the place top layer and ice the top layer and sides. (it will be thin) then place the pecans on the top of the cake and drizzle the last bit of topping over the pecans and put in fridge and let it chill.

Be sure to use a cake plate with an edge as the caramel will run down the sides of the cake before it is completely chilled.

I made that Caramel Cake...without the cake and the nuts. Yep, squirted that whole jug of caramel topping right into my mouth. Not all at once, though. I LOVE living alone where no one can see what a lazy pig I am!

When you find a cake recipe that requires ZERO baking, please post it. I hate turning on the oven on when it's over 90 degrees.

No Bake Cake

Grab wallet
walk out to car
open door get in car
close the door
put key in ignition
start car
put in reverse
back out of driveway
put car in drive
drive to nearest grocery or bakery
park car
turn off car
open door
walk into store
walk to cake display
pick out cake of choice
take cake and walk to registry
pay for cake
return to car
start car
put in reverse
back out of paking space
put car in drive
drive home
park in driveway
turn car off
open car door
walk into kitchen
open cake box
take out fork
and eat cake
put let overs (if any) in fridge

These two go over real well with our bunch. They can be slightly costly but well worth the price...


Twinkie Cake

1 box of Twinkies
1 can of crushed pineapple (drained)
4 large bananas (sliced)
1 large box of vanilla instant pudding mix (fix according to directions on box)
1 large tub of Cool Whip (partially thawed) this makes it easier to spread
Chopped Nuts (if desired)

Slice twinkies in half (long ways) put the cream side down in a 13x9 baking pan. Put the pineapple on top of them. Next place the sliced bananas on top of that. Poor the prepared pudding mix over all of that. Put the softened Cool Whip on top of that. Chill this in the refrigerator for about 4 hours. Add nuts as desired....


Million Dollar Pie

1 medium can of crushed pineapple (drained)
1 can of Eagle Brand Milk
1 12oz container of Cool Whip
1/4 cup of Lemon Juice
2 9 inch graham cracker pie crust

Mix all ingredients in a large mixing bowl. Fold with a spatula. Pour into graham cracker crust. Refrigerate til solid.

The Caramel cake sounds wonderful! I bet there can be different toppings used to as long as they thicken as they cool.

I also love Ginger bread cakes with this kind of topping with some whipped creme!

How about the jello cake?

Using a yellow or white cake mix.
Bake cake, let cool.
Poke holes in it with a wooden spoon and pour in the liquid jello.
Put in the frig and let set.
Then, use some cool whip for frosting.

Sunny i'm sooooooo guilty of that also and eating the chocolate chips out of the bag and having none left for baking....

can't forget the quick and easy

1 box of instant chocolate pudding
1 8 inch graham cracker crust
1 small tub of Cool Whip

Prepare the pudding as directed on the back of the box. Pour in to the Graham Cracker Crust and let chill for about 2 hours. Cut pie in to slices and serve with a dallop of Cool Whip on top....

My favorite is

1 box of vanilla instant pudding
1 8 inch Oreo Cookie Pie Crust
4 Oreo Cookies (crushed)

Prepare pudding as directed on the back of the box. Pour in to Oreo Cookie Pie Crust and let chill for about 2 hours. Cut pie in to slices and sprinkle crushed Oreos on top.

Pina Colada Cake

Bake a yellow cake in an oblong pan.

While still warm poke holes with a wooden spoon and pour canned cream of coconut over the top.

After cake is cooled, fold a small can of crushed pineapple into a regular container of Cool Whip.

Spread on cake a top with shredded coconut.

Store in the refrigerator.

One of our favorite summer cakes is a nice lemon layer cake, with cool whip between the layers, frosted with a very light lemon frosting and topped with an arrangement of glazed fresh fruits (pineapple, kiwi, and strawberries).

The cake looks absolutely fabulous and always gets raves.

Did I post this one already? Quick and cool.

Ingredients:
I package of regular (not soft and chewy) Chips Ahoy cookies.
1/2 cup of milk
Container of Cool Whip ( mainly because whipped cream might not hold up)

In Casserole dish:
Spread layer of Cool Whip.
Dip each cookie in the cup of milk, them place in layer over Cool Whip.
Cover with Cool Whip.
Continue with layers of cookies and Cool Whip.
Chill overnight.

Best to make the day before you start a serious diet.

Thought of another one!!

Ice Cream Sandwich cake!

Cool whip ( or whipped cream)
Ice cream sandwiches
Chocolate syrup

Spread whipping on bottom of glass dish
Place sandwiches side by side, cake side down.
Cover with whipping. Sprinkle with syrup ( or crushed candy or cookies)
Layer more sandwiches.
Finish with more whipping; trickle more syrup, if desired.
Cover tightly and freeze overnight.

Summer Trifle

In trifle bowl, layer cubes of angel food cake.
On top, spoon pudding of choice, lke lemon or vanilla..
layer of sliced strawberries or whole blueberries.
Spoon lemon curd, then whipped topping.
Repeat until bowl is full and chill.
