my son came over today hes a chef but we were discussing the small reception ( which might end up with at least 50 people) so far we said stuffed mushrooms ( sausage) cocktail weinies ( in barbecue sauce) antipasto tray with olives, pickles, cheese cubes, crackers,carrots,celery and dip finger sandwiches punch is called tart and bubbly wedding punch wedding cake will be 2 tier square bottom and a round top tier with peach roses and the little bridal couple
soooo ok yall kick in the suggestions.. we are also trying to figure how this will be pulled of since the wedding is at 6 pm and you guesed it my son the chef is also the one walking MOM down the isle to give her away .. the church is 5 minutes from my house and the reception.. although i figure we will get it all done or most of it the after noon of the wedding..Sweet N Louisiana

Sweet good luck with your wedding plans!
i just did a social hour with horsd’oeuvers and a rehearsal dinner the same evening about 1.5 months ago for over 100 and it was a handful ...lol .. actually dinner was catered and 1 sever to keep just the shrimp and crawfish replaced was a busy job for one even with it being buffet style... all i can say is get everything done before your wedding day as much as possible because you will be so stressed and over worked if you do not... and have friends and family to help out.... and plan plan plan and make a list and check it off as you go....

the majority is done as far as the planning i think.. but the factor that will be weird as i said is that the chef/ caterer is my son .. LOL with a duel role since hes giving MOM away.. thats why we are gonna get as much done ahead as possible.... Sweet N Louisiana ( I was not nerveous before but the closer it gets...)

Smoked Salmon Cracker Spread
Ingredients: 8 ounces cream cheese, softened 1/2 teaspoon salt 1 tablespoon lemon juice 2 teaspoons finely chopped onions 1 teaspoon liquid smoke 1/2 teaspoon prepared horseradish 1 (16 ounce) can salmon, drained,bones removed,flaked chopped pecan, for garnish chopped parsley, for garnish
Directions: In small mixing bowl beat cream cheese at medium speed, scraping bowl often, until light and fluffy (2 to 3 minutes). Add salt, lemon juice, onion, liquid smoke and horseradish. Continue beating until well mixed (1 to 2 minutes). By hand, stir in salmon. Spoon into a serving bowl. If desired, garnish with pecans and parsley. Serve with crackers. Store in refrigerator.

These can be made ahead and frozen. Delicious little buggers!
Ham Balls
These are yummy and easier, because the meatballs cook right in the sauce...no frying! These freeze very well.Makes about 120 balls.
Ingredients:
For Ham Balls 1 lb ground ham 1 lb ground round 1 lb 2 cups soft breadcrumbs 1 cup milk 2 eggs For Sauce 2 cups brown sugar, packed 1 cup vinegar 2 teaspoons dry mustard 1 cup water
Directions Make the sauce by mixing all sauce ingredients. Cook just until it gets bubbly, stirring occaisionally. To make the ham balls, mix all ham ball ingredients together. Form into balls the size of a walnut. Drop meat balls into sauce and cook slowly for 1 hour. These freeze well.

Spinach Pinwheel Appetizers These are pretty to look at, but even better to eat! Enjoy!! This makes a lot.You should get 8 rolls out of it at least. I like to use the white flour tortillas along with the Spinach tortilla and Tomato Basil tortilla to add extra color to the platter. I was asked for this recipe everywhere I took it, even from a wedding caterer. These should be made several hours ahead or overnight.
Ingredients: 2 (10 ounce) packages frozen chopped spinach, thawed drained & squeezed dry in paper towels 1 (8 ounce) package cream cheese, softened 1/2 cup mayonnaise 1/2 cup sour cream 1 envelope 1 jar bacon bit (or to taste) 4 green onions, chopped 1 (8 count) package 10-inch flour tortillas
Directions: In medium mixing bowl, combine cream cheese, sour cream and mayonnaise. Beat in dip mix. Add green onion, bacon bits and spinach (broken up into small clumps). Mix thoroughly. Spread mixture onto tortillas, leaving a 1/2" space around edge. Roll up each tortilla tightly, and wrap each in plastic wrap. Chill for several hours or overnight. To serve, cut off ends and cut into 1/2" slices.

Warm Brie & Berry Dip So simple, yet tastes incredible! This screams wedding reception.
Ingredients: 1 loaf 2 lbs brie cheese, trimmed and cubed 1/4 cup brown sugar 1/2 cup chopped pecan, toasted 1/2 cup pine nuts, toasted 1/2 cup blueberry 1/2 cup raspberry
Directions: Slice the top off a round loaf of sourdough bread. Save the top, but hollow out the inside of the loaf. Discard insides or use for breadcrumbs later. Combine brie, sugar, nuts and berries. Place into the hollowed-out loaf and cover with bread top for a lid. Wrap in foil and bake for 40 minutes at 350 degrees. Serve warm with a tray of sliced baguettes. Bread lid can be cut into pieces and also used for dipping.

Taco Cheesecake This appetizer proves that cheesecake is not just for dessert. Very good and the presentation of this is impressive. Enjoy! HELPFUL HINT: When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands and avoid touching your face. This should be refrigerated overnight. 20 servings.
Ingredients: 3 teaspoons cornmeal 3 (8 ounce) packages cream cheese, softened 1 envelope taco seasoning 1/2 cup sour cream 1/2 cup salsa 2 eggs, lightly beaten 1 cup shredded monterey jack pepper cheese (4-oz.) 1 (4 ounce) can chopped green chilies, drained 1/2 cup chopped ripe black olive TOPPING 1 cup sour cream 1/4 cup sliced black olive 1/4 cup sliced green onion 1/4 cup sliced cherry tomato 1 jalapeno pepper, sliced
Directions: Sprinkle bottom of greased 9-inch springform pan with cornmeal; set aside. In mixing bowl, beat cream cheese until smooth. Add the taco seasoning, sour cream and salsa. Stir in the eggs, pepper jack cheese and chilies. Fold in olives. Pour over cornmeal. Place pan on a baking sheet. Bake at 350 degrees for 30-35 minutes or until center is almost set. Cool on a wire rack for about 10 minutes. Carefully run a knife around edge of pan to loosen; cool for 1 hour. NOTE: top of cheesecake may crack. Refrigerate overnight. Remove sides of pan. Spread sour cream over top and sides of cheesecake. Arrange olives, onions, tomatoes and jalapeno slices on top in a circular motion. I do tomatoes on the outer edge, then green onion, jalapeno, then scatter black olives randomly, within the circle. Use your imagination when decorating. You may have to slice a piece off to get people to try it. Once they do, they will not leave it alone. Serve with assorted crackers and tortilla chips.

Brie en croute....along the lines of Keen's recipe...but slice brie wheel in 1/2 horizontally, fill w/ preserves or dried fruits. Replace top. Wrap in thawed puff pastry, sealed at all the edged, and refrigerate until pastry is chilled again. Bake according to directions for pastry. Serve with assorted crackers and crudites.
More crude...a block of cream cheese...rolled in Good Seasons packet, flavor of your choice. Roll until the entire package is used, pressing seasoning into the cheese if you have to to use it all. When the block is sliced, the seasoning is distributed. Serve w/ crackers. Can also use this to stuff cherry tomatoes.
Halved, hollowed cherry tomatoes, stuffed with marinated mozzarella balls. Looks nice garnished with basil sprigs. Serve w/ cocktail picks- no crackers.

red...how about a couple of watermelon fruit baskets. They are simple to make and just require cut up of the watermelon and any other fruits to your liking selection. Throw in a couple cans of chunk pinenaple, strawberries, blueberries, grapes, cherries, orange segments, and some marshmellows. Wha! La! And they are pretty too! Store them in a chest with a bag of ice.

red...another alternative to meat, is already made swedish meatballs. Get out your crockpot add them with about a cup of water mixed with lipton onion soup mix and let simmer a few short hours. Drain and serve with toothpicks.

mushroom Philo shells ( chef me ) I have no standard recipie , but this is so delicious its rediculous ...
take the stems from the mushrooms you are stuffing .... chop them very fine ... in a stock pot ..
sweat some bacon , add some finly diced onion , your stems , garlic , and chicken stock to cover , s and p to taste reduce by half , fill mini philo dough cups ( there little mini shells in the freezer section ) with your mixture ,, pipe a mixture of mayo and parmisian cheese onto the top and bown ( like three min under broiler ) it sounds a little yuk , with the mayo but it makes the dish ,,, this is a no miss ... I cater and its always a hit

quick and easy sausage balls
2 - 4 lbs of Jimmy Deans Maple Flavored Sausage 2 1/2 pounds of Shredded Cheddar Cheese 3 packages of Ritz Crackers (crushed)
Mix all 3 ingredients together in a large mixing bowl. Roll in to balls. Place on a cookie sheet lined with aluminum foil (easier to clean the pan) and bake at 375 for about 20 minutes (or until brown)......
