Painter and I were talking about her boys heading off to college. One likes to cook and the other will eat anything. Great team!! I know a lot of you have kids heading off to college and may be concerned about their eating habits.
Let's put together some quick, easy, cheap, yet tasty and nutritious ideas together for them.
1 - Top Ramen -- Many college kids actually manage to live on this stuff. In Hawaii it's call "simin" my mother-in-law used to send it in a care package before we could buy Ichiban (sp) over here. Make it healthy by adding sliced lunch meat, sliced boiled eggs, and some veggies (canned or frozen).
2 - Beef or Chicken Soft Tacos - for a quick & easy version used canned beef or chicken. Break the meat up in a skillet or pan, add chili powder, cumin, onion powder, garlic powder, maybe some oregano. Put it in a warmed up corn tortilla with some shredded lettuce, tomatoes, & cheese if you like.

One thing my sons eat when away
Cook a pot of brown rice..then fry it in olive oil, add to it fresh chopped mushrooms, onions and slightly cooked brocolli tops. add salt and pepper to taste.
Fast...easy...healthy..and fills the tummies.

cheese quesadillas- shred cheeses on soft taco shell, roll, microwave about 20 seconds. add salsa if desired

Splurge with the store bought rotisserie chicken ! Use leftovers for soft tacos or... Chicken & Noodles by adding a can of Cream of Chicken Soup

Oh I love those chickens......especially the lemon pepper.....Never thought to cut them up and add to tacos or on a quesadilla shell......Im gonna forward these to my sons.....

Trail mix: Home made granola (or cheat and buy store bought)
mixed nuts, or just peanuts dried fruits pretzel sticks m and m's if there isn't a problem burning off calories!
Yogurt/Gogurt
club crackers/peanut butter/hard salami

this is something I fix when I am too tired to cook a full meal
boil in bag rice a can of cream of chicken soup undiluted a small can of mixed veggies and a small can of cooked chicken breast boil the rice and drain well mix the soup , the veggies and the canned chicken together, heat through and top the rice with it
I also use those cans of the chunky soups to top the rice..

I'm a 33 year old "college kid." I like Speghettios and Kraft macaroni and cheese.
I tend to cook on the weekend for the whole week and cooking and studying go well together.

A crockpot is great for college students! A larger one for soups, casseroles and meat entrees and a small one for dips.
Busy Day Beef Stew Serves 6
Ingredients 6 large potatoes, pared and quartered 6 large carrots, pared and quartered 3 lbs stew beef chunks 1/3 cup soy sauce 1 teaspoon salt 1 teaspoon paprika 1/2 teaspoon pepper 3 tablespoons flour 1/2 large onion or 1 medium onion, chopped 1 cup beef broth (may be canned) 1 (8 ounce) can tomato sauce
Directions Place into crockpot in this order: potatoes, carrots, meat. Sprinkle the meat with the soy sauce, salt, paprika, flour, in that order. Spread the chopped onions on top of that. Combine the beef broth and tomato sauce; pour over all of the above. Cover and cook on low 9 to 11 hours. May be cooked on high for 5 hours. May be stirred during cooking, although, stirring is not necessary.

Will they have a kitchen area to cook in or just a dorm room? That makes a big difference. My step-daughter lived in a dorm room, but she had a little counter top where she could sit a toaster, crockpot and still have enough room to chop stuff up and prep a meal. She also had a small microwave on a stand.

A lot of colleges offer a "general area" where kids can get eggs to order, burgers, etc...

My sons are fortunate to be rooming with two other student/baseball players...They are able to rent a really nice 5 bedroom with a game room and hot tub and full yard for 1,000.00 a month...They are looking for a 5th roommate....They lucked out and is actually cheaper than the dorms. My older son is a great cook.....and I have been forwarding the recipes..Thank you everyone.....

everything..lol..and I gave them all the pots and pans, micro and blender so they are stocked.. ...and one of the boys dad bought them a gas BBQ.......
There are 4 big BIG youngmen rooming together and have baseball practice 2 times a day...(Fall ball) so stews or crock pot and soup recipes are great...They all shop together and Shea will cook.......He loves cooking plus got the huge master bedroom with walk in closet and his own bathroom so he doesnt mind...lol

WOW! These kids have it made in the shade! That's awesome!
For the grill:
Pig Burgers (a copycat recipe) Serves 2-3 This is Townsend's Pig-Burger From Knoxville, TN. Use more or less meat, depending on servings desired, I usually serve with fries, baked beans and slaw for a full dinner.
Ingredients 1 lb hamburger (or more if needed for crowd) 1 lb pork sausage (or more, if needed) hot sauce (to taste) chopped onion (to taste) sage (to taste) seasoning salt (to taste) pepper (to taste) sauteed onion, for topping barbecue sauce, for topping
Directions Thoroughly mix together 60% of the ground beef, 40% of the ground sausage and form into 1/2 lb patties. As stated above in ingredients, use more meat for more servings, but the 60/40 gives you a guidline of how much of each goes into it. Grill until golden brown.
Serve with sauteed onions.
Serve with a generous amount of your favorite BBQ sauce on bun.

MMMMMMMMMM Everything sounds delicious. Loreli Im a big time hot dog eater but have never tried turkey franks.....Im gonna have to tho.
I am heading to Klamath tomorrow.....gonna see which recipe the boys are gonna tackle first...Ill let you all know the results.

They're looking for a roommate???? I'll be glad to move in!!! Of course I can't pay anything.... I'm a good supervisor though --- OH.... I'll supply recipes!!! Does that pay my way????
I forgot that they're baseball players... Goodness.... Top Ramen will never fill one of those stomachs.
