A Scotch Egg is a hard boiled egg with a layer of seasoned sausagemeat, breadcrumbed and deep fried - eaten hot when just cooked, or cold.
Hard boil and peel quantity of eggs.
Season some sausagemeat with worcestershire sauce, salt, pepper- add a little plain flour so that it doesn't get too wet to handle. 1 lb of sausagemeat will cover about 7 eggs.
Wrap the sausagemeat around each egg in a layer just less than an half inch thick. Make sure you don't leave any holes.
Dip each one in beaten egg and coat with breadcrumbs.
Heat your oil pan to 350-375°F/180-190°C and fry the scotch eggs for 5-6 mins or until golden in colour.
Tips
Use a floured surface/plate so that the sausagemeat doesn't stick.
Add a pinch of salt before beating your eggs, it breaks the egg down more quickly.
If you aren't sure about the oil temperature, drop in a piece of bread, if it turns golden in less than a minute, the oil is about right.
The best oil for this is Groundnut/Peanut Oil.
You will have to change your cooking oil after making these, so if you use a fryer, make these just before your next oil change.
Do not reheat.
Best served hot or cooled at room temperature (not chilled).

If you are pan frying these in shallow oil, turn the Scotch Eggs regularly to brown evenly and increase the cooking time for up to 7 minutes.

We don't deep fry our Scotch eggs...we bake them instead. Saves time, energy and calories!
