I've actually dated a girl once just because she was always making really good food...She later found out that that was what I was doing and it hurt her feelings.

Are we talking using authentic Key Limes...or simply Limes? That would make a big difference.
Hair Pie?.....I prefer a "clean plate" however there are exceptions.....

America's Test Kitchen performed a taste test to see if key limes tasted different from limes. The result was that no one could tell the difference between the two pies. I also don't notice a difference in taste between pies made with Key West Authentic Key Lime Juice and regular lime juice.
I like using limes in my key lime pie. I zest the limes first and then wisk the zest with the egg yokes for a few minutes. That releases the oils and the complex flavors from the zest into the yokes and tints them green. So my "key lime" pies have a very slight green tint. Looks cool and tastes great!
I say if she makes it all by hand, she's a keeper!
