Days get grey and I eat food that's white.
A friend complained that almost everything in this dish is white, but he ate a heck of a lot of it! Our nickname for it is Spacking, because it is sticky and lumpy and great comfort food.

The amounts given here are for two, but it can be expanded in easy increments.


2 half chicken breasts.
1 cup rice
2 cups water
2 small onions
1 can mushrooms
1 cup sharp chedder
1 cup mozzerella.

Cut the chicken into bite sized pieces and marinate in your favorite style. I've used everything from itallian dressing to chinese ginger/garlic/vinegar/soy. Set aside to marinate.
Start the rice so that it will be just finished cooking as you finish the rest of the dish. It needs to be hot to melt the cheese.
Dice the onions and brown them. Add the mushroom to heat. Add the chicken and toss till browned.
When the rice is done, add the cheese, chicken and everything else. Stir till well mixed. Salt and pepper to taste.

It's lumpy and all white and looks kinda funny... but it is warm and cheesy and comforting.
Serve with a side salad and there is a full meal.

Sounds good and easy to make. It sounds like it might be good wrapped in a tortilla.

I guess you could do that!
A friend called it the Chinese version of Mac and Cheese.
