Tis the time of year for fresh pumpkin - I make and freeze my own to use throughout the year - looking for new and different ways to try it this year. What you make vs the canned you buy is totally different. Of couse it is sooo much better and impresses people when you tell them its totally made from scratch!
For freezing I do mine like I would bake an acorn squash - when it is soft, scrap the meat from the rind. Process in a blender or food processor. I let mine sit in a colander to get rid of excess liquid. Put in freezer bags and freeze. I put one cup in a bag. My pie and bread recipe calls for it in that quantity so this way its already correctly measured.

Maybe thats why thats my favorite thing to make - its a win/win situation
FYI for the furbaby - pumpkin will take care of loose stools - great fiber and cheaper than a trip to the vets!

I love Pumkin Roll (it has cream cheese mixture in the middle and is rolled pinwheel fashion then sliced). It's very popular around my area.

Don't forget the powdered sugar on the pumpkin roll - you know, to help make it more calorie free. Pumpkin bread is what I give to my neighbors at Christmas time. Just trying to figure out something different to do this year.

I love pumpkin pie after I had my brain surgery, I couldn't smell or taste anything for almost 2 years.. the very first thing I actually tasted was pumpkin pie.. I cried my eyes out after the first bite

Carol, no one in my family has put powdered sugar on their pumpkin roll. Now you've just told me how to make it even more unfriendly to our waist lines. Gee thanks...LOL!

How about adding some Pumkin Seeds to the gift?
Pumkin Seeds
Ingredients 1 quart water pumpkin seeds 2 tablespoons butter 1/8 cup salt
Directions Wash your pumpkin seeds (get all of the pumpkin off them). Boil 1 quart of water. After water has boiled, place the clean seeds and 1/8 cup of salt into water for 10 minutes- stir the whole time. Melt 2 Tbs of butter. Drain the seeds and mix them with the butter (add some salt if you want). Place the seeds on a 2 layer tin foiled pan and place in oven at 350 F for 30 minutes. Do not refrigerate seeds- put them in a sealed bowl and leave them on the kitchen table.

Here's another unique gift and is my grandma's recipe. It's great on toast. Tastes like you are eating pumpkin pie for breakfast! Just make sure "gifts" are labeled with directions on how to store it.
Pumpkin Butter Makes about 2 cups
Ingredients 1/4 cup brown sugar, packed 2 tablespoons granulated sugar 1/4 cup water 1/2 teaspoon allspice 1/4 teaspoon ginger 1/4 teaspoon clove 1/4 teaspoon nutmeg 1/2 teaspoon cinnamon 1 1/2 cups canned pumpkin (NOT pumpkin pie filling mix)
Directions Combine everything except the canned pumpkin in a microwaveable one quart bowl. Mix well. Microwave on high for 3 minutes, then stir. Mix in the pumpkin well, and microwave on high 5 minutes longer. It should be bubbly. Put into clean, sterilized jars for gift-giving, or into other clean, airtight containers for home use. Let cool slightly, then refrigerate. This will keep several weeks in refrigerator or can be frozen for longer storage. This cannot be kept in your pantry- must be refrigerated or frozen.

When I was in Australia, I was surprised at first, but ultimately delighted, to find that my friend would cut up pumpkin and roast it with other veggies, such as potatoes, turnips, carrots, along side a roast of port, beef or lamb.
I have done that several times since and love the wonderful sweetness it adds to a hearty meal.

This time of year I also bake a lot, and a fav with family and friends is my cranberry bread. Just sub crushed cranberries instead of pumpkin...not only makes beautiful loafs...but the sweet/tart combo is yummy! I also add a lil more cinimum...cimimum...cininum...oh, heck...you know.....and serving on a plate surrounded with sprigs of holly and holly berries is lovely.

I know it's probably too late for some people, but I learned something really interesting during my latest plumbing fiasco: don't EVER put the "guts" of pumpkins down the garbage disposal -- unlike most foods, pumpkin seeds and pulp can harden in your drain pipe and then your yard could wind up looking like mine ...

(My problem wasn't pumpkin, but the hardware store where we kept going back for parts had that warning posted everywhere...when I finally get a kitchen, I'll take this to heart and dump my pumpkin debris in the compost pile, for sure...just in case. )

Thank you Sunny. This is the first time I had had a garbage disposal. ( since I met Haban) They always went to the compost pile, where in the following year we would have pumpkin plants growing!

There's a great British decorating magazine called Living Etc. This month, they have a ton of pumpkin recipes, including:
Swiss Chard and Gruyere Gratin
1 T olive oil 2 Garlic cloves crushed 2 bunches (about 1 pound) of Swiss chard, trimmed, rinsed and sliced 1/2 cup heavy cream sea salt and cracked pepper 2 x 1 1/4 pound pumpkins, halved and seeded 1 3/4 c grated Gruyere
Preheat oven to 350F. Heat a large saucepan, add oil and garlic and cook for 2 minutes add Swiss chard and cook until soft. Add cream, salt and pepper and cook for another minute.
Place pumpkin halves in a baking dish. Spoon in swiss chard mixture and top with cheese. Cover with foil and bake for 40 minutes. Remove foil and bake another 10-15 minutes until top is golden.
Recipe has been converted from metric.
