I just picked up a case of peaches for canning but they are far from being ripe. Does anyone know of a way to speed up the ripeining process before they tend to bruise and spoil?

I always just keep them out on the counter for a couple more days, they should ripen that way. I had read once to not put them in your refrig because they will never ripen if you do.

Depends on how ripe they are. They will soften during the canning process.
Do you have the Blue Ball canning book???

just leave them in a bowl on the counter, they will get nice and soft and juicy..sweet too..just swat the fruit flies out of the way before you eat them...

^^^^^^ Yep, and be sure and rotate the ones on the bottom up to the top, to keep them from brusing as they soften.
Gosh, now I'm sooooooooo hungry for some good 'ol SC or GA peaches!
