This recipe only makes 4-5 pints, but I figure if I'm going to go to the work of making it then I'm making a LOT! I'll put in ( ) the number of ingredients to make 20 pints. If you only want the smaller amount then follow the original numbers.
(60) 12 med-large green tomatoes (20) 4 onions (20) 4 green peppers (actually, 3 green and 1 red) (5) 1 Tbls. salt (10) 2 Tbls. celery seed (10) 2 Tbls. mustard seed (10) 2 teaspoons tumeric (5) 1 pint vinegar (apple cider) (10) 2 cups sugar
Grind together the tomatoes, onions and peppers and be sure to drain well. Add the vinegar, sugar and seasonings. Cook 8-10 minutes after the mixture begins to boil. Seal in well-sterilized jars (I do a water bath). After removing jars from the water bath, put on a thick towel, and let them cool. When you hear a "ping", you'll know you have a proper seal and the lid should be indented somewhat.

I ended up making 30 pints even though I followed the recipe. Must have been bigger 'maters...

On a program today, they added this relish to ground pork and beef, 3 eggs and bread soaked in milk. They made meatloaf, and also put some on top of the meatloaf when serving. Sure looked pretty!

I usually eat this relish on mainly a hot dog or a cold meat sandwich. When I think of it, I'll throw some in my homemade macaroni or potato salads too.
That sounds good Loreli, will have to try that someday.
