Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):


2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme


Combine all ingredients thoroughly.

Do you have a recipe for chipolte dip? I buy an Uncle Dans one but it's getting expensive so I thought I'd see if I could find a dip on the web but no luck so far. I will try your Essense creole when I want to make something spicy, though.

CHIPOTLE SALSA

2 t. canned chipotle peppers in adobo sauce
14 oz. canned diced tomatoes
1/3 c. chopped green onion
lime juice, cilantro and olive oil to taste

1. Chop chipotle peppers in a food processor until they form a paste.
2. Stir in remaining ingredients, adjusting seasonings to taste.

3. Chill, and serve with your favorite Mexican food.

Chipolte Dip

Ingredients
•3 chipotles in adobo sauce, canned
•1/2 tsp. adobo sauce from can
•1 cup mayonnaise
•1/2 cup sour cream
•1 1/2 tsp. lemon juice
•2 scallions, finely chopped

Directions
1.Finely chop chipotles
2.In mixing bowl, add remaining ingredients with chipotles
3.Refrigerate for at least 1 hour
