Condiment Recipes – Seafood Sauces / Tartar In Particular
Anyone have some outstanding condiment recipes to share? Living in the Pacific Northwest we get lots of seafood and looking for seafood sauces, especially a good tartar sauce. Thanks!

Your lucky to have access to good seafood.
My favorite tartar sauce is half mayo and half shallots(spelling?)

That was it.......nothing else in it, just half Mayo and half Shallots?!?
Boy was that an easy one........hey, all of the shallot or just the green part or the white part........details you know!

GOOD CRAB ~ Regarding good seafood.....and I found out (slow learner I guess) a great way to clean crab so you don't have all that yellow floaty stuff making the meat all yellow and nasty.......
BEFORE cooking, crack the crab (talking Dungeness here) in half down the middle up the little pyrimid on the belly, and then take the top shell off and clean out all the lungs/guts, so all you have is legs left.
You get really clean crab to feast on and it's already divided up and easy to handle that way!

i Think your thinking of green onions...Shallotts are small sweet onions.kinda hard to find sometimes.That's all I like to use for a simple tartar sauce. A nice Vidiala onion would work. There are many good sources for recipes on the net. Use your search option and you will be surprised at the amount of neat stuff out there.
