MP3 players generally play back MP3 files that have been loaded onto them via a computer. They have either hard drives or solid-state storage media on which the files are written, and they usually have simple controls and a headphone jack for listening.
The iPod is an MP3 player and has all the features stated above. However, it has a few things that most MP3 players do not:
It can play M4A and M4P files, which are Apple-format music files (the latter protected.) It can play uncompressed WAV or AIFF files. It has a click-wheel, touch-wheel, or scroll wheel, a handy way of scrolling through files. It generally has a large, easy-to-read display. Some have color displays, some (like the Shuffle) have no display at all. Most iPods can store contact info and notes created on the computer. iPods have a built-in mechanism for syncing to the iTunes application from Apple. Some iPods (and some mp3 players) can be used as USB / Firewire storage drives. iPods all have the slick, simple styling Apple is known for. iPods use a proprietary dock connector requiring use of their (or licensed) cables.

I have about 4 ipods.
The biggest difference (you will find when you get one), is that all of your songs on your ipod are in apple format and can only be played in itunes or on the ipod. In addition, you cannot share the songs on your ipod with anyone else (anyone who doesnt share your itunes).
I would go with an mp3 player. MP3's are generic music files that can be played on a computer, or basically anywhere. You can also share them freely with your friends. I would go with a Zune. It has wi-fi capabilities where you can share songs with others who have one, or get online with it with no cables to download new music.
While they are nice, you feel fenced in with an ipod. I wont buy another one.
